古早炒面条

这几天特别怀念小时候外婆家的炒面条,这种特别想的喝望,有如孕妇想吃某种食物那么的期待!有种吃不到面条心不死的心态。于是便和煮妈一起动手,上个“古方潮州炒面条”课程。

所需要的材料如下:

潮州面条一公斤,煮开一大锅的水,把面条放下,这种面条咸度高,得煮长点时间,再用冷水洗去咸味和面糊,笠干。
猪肉切片,放点酱油,糖,盐,水和太白粉。
喜欢的话,准备一些海虾,去壳除肠。
豆芽可以买多点,韭菜则不能不放,买回来时把它洗净切段。


因为这是“仿古”的做法,鸡精粉或其他的调味都不能用,那个年代,那来的那么多的调味品!完全得用上当时有材料和调味,才算合格!

蒜米炒香,放下猪肉和虾,当猪肉和虾开始变色时,便可以盛起来,再放点油,放蒜米,炒香后,便是时候把面条放下了,撒些糖和味精,然后不断的翻炒,放下豆芽和韭菜再继续翻炒,炒到差不多的时候,便可以将猪肉和虾回鼎,再炒数下就可以了。

mom cooked this grandma noodle few days ago, i like it so much i can taste the 'ku ja' taste.. Pui uan like the noodle as well

好像好好吃呢, 鸡丝河粉干捞style? 可惜我家鲜少炒面条吃,每一回都是炒米粉的。我想大约都是因为炒面要比米粉多用油一些,所以母亲又一健康为由而显得意兴阑珊

Thanks to Uan's pregnancy, you can enjoy home cooking these days!
I miss grandma since this grandma's noodle recipe is published. I didn't particularly like this noodle when I was young. Remember grandma liked to make hot and over sweet Ovaltine when we and friends visited her?But now, I miss this noodle so much, I miss going back to those old good days, I miss going back to grandma's house when everyone was still there, I miss going back to that time of Sungai Golok...I am sure, i am getting old...

美好的事物令人怀念,不管何时何地,任何年龄,懂得怀念是因为明白了,不是老了。
